Sooner or later every Paris trip ends up on the water.

An hour from the foot of the Eiffel Tower, past the Louvre, round the Île de la Cité and back, is the cheapest hour of sightseeing in the city. Dinner afloat is a different evening entirely, and priced like one.

Museums and river cruises exist in every European capital. A 2CV with the roof rolled back, a macaron built the way this city invented it, and a bottle you blended yourself do not.

Citroën’s brief for the 2CV was blunt: carry two farmers and fifty kilos of eggs across a ploughed field without breaking one. A few hundred survive in Paris as open-roof tour cars, and an hour in the back of one — canvas peeled away, Haussmann’s boulevards going past at the speed they were drawn for — is the least museum-like thing in this city.

The macaron, made properly

The almond biscuit is old and Italian. The Paris version — two shells, a ganache pressed between them, a clean ruffled foot — was put together at Ladurée on the rue Royale early last century, and every pastry counter in the city has been copying it since.
